Ambrosia Winery

Ambrosia Winery brings together the ancient winemaking traditions of Georgia with a fresh, international perspective. Founded by three women from Italy, France, and the Greek-American diaspora, Ambrosia was born from a shared passion for Georgian viticulture and a desire to present it through a modern, refined lens. Inspired by Georgia’s 8,000-year-old winemaking heritage, the founders set out to create wines that are both rooted in tradition and forward-looking in style. Their visual identity draws from the famous Dzalisi mosaic near Mtskheta, depicting Dionysus and Ariadne at a banquet. This classical image was reinterpreted with the help of artificial intelligence and framed within the shape of Georgia, symbolizing rebirth and feminine creativity. Georgia is home to more than 500 native grape varieties and is widely regarded as the birthplace of wine. Ambrosia works with key Georgian grapes such as Rkatsiteli, Mtsvane, Kisi, and Saperavi. Their wines are shaped by the country’s diverse terroir, especially the limestone, clay, and alluvial soils of the Tsinandali sub-region in Kakheti. Warm days and cool nights give rise to elegant wines with bright acidity, minerality, and balance. Ambrosia focuses on purity, clarity, and local expression. Their wines include: White Dry (Mtsvane and Rkatsiteli, 2024): Fermented in stainless steel, fresh and textured with notes of citrus, white peach, green apple, and acacia. Pairs well with grilled fish, cheese, pkhali, and lobio. Qvevri Kisi Chardonnay (2021): A skin-contact white wine with complexity, structure, and subtle aromatic depth. Semi-Dry Rosé (Cabernet Franc, 2024): Light and expressive, crafted with delicacy and freshness in mind. Red Dry (Saperavi, 2024): A bold, deeply colored wine with structure and aging potential, showcasing Georgia’s flagship red grape. Chacha (2024): A traditional Georgian grape spirit distilled from the winery’s own grapes. Smooth and powerful, rooted in centuries-old practices. Winemaking Philosophy Ambrosia combines traditional Georgian methods, such as qvevri fermentation, with modern techniques that bring clarity and finesse. Their approach respects the land, the grapes, and the history, while crafting wines that are precise and internationally appealing. Every bottle reflects Georgia’s ancient winemaking legacy and the winery’s modern, artistic interpretation.
